Filipino Coconut Macaroons

Ingredients
  

  • 90 grams all purpose flour, (3/4 cup)
  • 1 tsp baking powder
  • 165 grams caster sugar, (3/4 cup)
  • 2 eggs, large
  • 1 can condensed milk, (392 grams)
  • 1/2 tsp vanilla
  • 200 grams desiccated coconut, (2 cups)

Instructions
 

  • Pre-heat the oven to 170C/325F.
  • In a bowl, whisk together the flour, baking powder, and sugar.
  • Add the eggs to the flour mixture, whisking until combined.
  • Add the butter, condensed milk, and vanilla. Mix thoroughly.
  • Add the desiccated coconut and combine until a thick batter is formed.
  • Scoop the batter onto the cupcake liners until about 3/4 full.
  • Bake the macaroons for 18 minutes or until the top is lightly browned.
